I think it’s just to make sure everything is even. Don’t think it’s a mandatory step, just ensures that the whole roast is circular instead of ovular (? is that even a word)… that’s just my guess though. especially since she only recommends cooking it to 138 (so it reaches 145 after carryover heat).
I don’t understand what tying the meat does. I know she said “makes it compact,” but why?
