How to Make a Chinese Pork Shrimp Potstickers for Scratch including the dough – 饺子

Video showing how to make a shrimp/pork pan fried dumplin from scratch including the flour dough.

Recipe 饺子

To Make Filling:
1 lb. ground pork
6 chopped prawns
2 chopped water chestnuts
1/3 cup chopped Chinese chives
1 teaspoon salt
1/2 teaspoon chicken base
1/2 teaspoon brown sugar
1 teaspoon cornstarch
1/2 teaspoon sesame oil
1/2 teaspoon light soy sauce
Mix all ingredients together for the filling

To Make Dumpling Shells

3 cups flour
1 cup boiling water
Gradually add boiling water to flour. Use chopsticks or fork to blend. Then use hand to mix dough.

For each shell, put 1 tablespoon of the filling. Seal the edges of each shell so the filling doesn’t leak out.

Add 1 teaspoon salt to pot of boiling water. Boil the dumplings for approximately 10 minutes. Then strain and rinse the dumplings. Pat dry each dumpling on a paper towel.

Preheat pan with 3 tablespoons cooking oil. Pan fry dumplings on medium to medium high heat for 3 minutes on each side of dumpling. Add more oil if required.

To serve, serve with soy sauce or your favorite dipping sauce. Enjoy!

Different recipes require different recipe. Some you can substitute flours, or add different flours into the mix. For example, steamed dumplings you can use wheat starch and tapioca flour. Steamed rice rolls you use rice flour. If you like, check out some of my mom's recipes under dumplings o n my channel page. Very similar to gyoza. I believe gyoza is the Japanese anem of these dumplings.
